The duties of a paralegal will vary depending on where you are hired.  If you work in a large downtown law office, most likely you will spend your time writing legal documents and helping with research.  In fact, you most likely will be doing most of the research while your attorney attends court hearings and works on committees.  They will have large clients like newspapers and ball teams.  If you work for a small attorney’s office, they may have you working with clients on signing documents or putting together end of life documentation or wills.  You will even be filing these things in court.
